In Montenegro, good things have never been made in a hurry. Not a house. Not wine. Not even cheese.

Today’s story was born following exactly that recipe.
Just outside the Cijevna River canyon, the married couple Ena and Nikola Ujkić decided to do what few dare to do these days…to stay here and create a truly Montenegrin, premium product.

And to prove to all of us that Montenegro can produce something world-class, yet entirely local.
Making cheese today is not difficult.
Making cheese that people keep coming back to… that’s a bit harder, but infinitely more rewarding.

Guided by that very idea, Ena and Nikola began crafting products that Montenegro had long missed—flavors we were used to searching for in Italy or on our travels, now created here, from local milk and under our own sky.
Today, next to the Cijevna, as part of the Highland Canyon story, they produce mozzarella—fresh, delicate, and simple, just as it should be when made by true artisans.

They also craft burrata, perhaps the greatest proof that patience pays off, as its creamy center cannot be rushed.

Then there’s stracciatella—light, elegant, and ready to become the kind of habit that easily becomes part of your everyday table.

We also highlight scamorza, a cheese with character, made for moments when a meal turns into a gathering with friends.

A special place is held by the traditional aged cheese, the perfect combination of rich flavor and high-quality local production.
